I’ll be honest with you. Unlike the majority of India I am NOT a breakfast person. I choose what I eat as soon as I wake up, and I prefer something that is not too strong like cereal or doesn’t involve spices. Now, this arrangement worked perfectly while I was by myself or living with my parents where I still throw some tantrums. But when I got married, the situation changed quite a bit and as luck would have it, my husband is AN ABSOLUTE breakfast person. Yeah God picks ’em just poles apart, doesn’t he?
So anyway since I got married, I have been making breakfast – the usual – eggs, pancakes, Indian breakfasts like poha, upma, dosa etc. And tbh, I cooked these for the hubs for the most part and I only nibbled around it or just chose not to eat it. Until Vermicelli came into my life. I LOVE VERMICELLI. I have convinced myself that it’s just a cousin of noodles and pasta so it’s all cool. I like making and eating this Vermicelli Breakfast otherwise known as Vermicelli Upma or Sevai Upma. Bomb dot com. No jokes. Also, VEGAN! Bonus 🏆
Breakfast Vermicelli or Vermicelli/Sevai Upma
Serves 2 | Prep time : 15 min | Cook time : 10 min
- 1 cup roasted vermicelli (you will find packed roasted vermicelli)
- 1 onion, small, chopped finely
- 1 carrot, small, chopped finely
- 1/3 cup green peas, washed
- 1/3 cup sweet corn, washed
- 1/2 inch ginger, chopped
- 1 green chilli, chopped finely
- Curry leaves, 5-6, washed
- 1 tbsp vegetable oil
Add the oil to a flat pan, on a medium flame. Once hot, add the curry leaves, green chili and ginger. Next, add the chopped onion and stir till you see the onion turning translucent.
Follow with the carrot, green peas and sweet corn. Mix well and then add a third of a cup of water so it all cooks well and put a lid on. Next, once you see that the water had reduced considerably, add the roasted vermicelli and stir well till everything combines. Add another 1/2 cup of water too this mix in order for everything to cook. Place a lid on and keep the flame on medium low.
Keep checking by removing the lid so as to ensure that the vermicelli is not sticking together.
You should see that the vermicelli is cooked in about 3-5 minutes.
Remove the lid and serve hot. You can also add chopped coriander to garnish.
